The best greek salad and dressing! Be sure to use the very best ingredients!

ingredients

  • Salad:
  • 1 bag Cherry tomatoes (or any kind you like), cut in half
  • 4-5 Persian cucumbers (Japanese work well too), cut in pieces
  • 1/2 Red onion, sliced thin
  • Handful Kalamata olives
  • 1/2 c feta cheese, crumbled
  • Optional: Romaine lettuce and bell peppers
  • Dressing:
  • 3/4 c. good olive oil
  • 2-3 tablespoons fresh lemon juice
  • 2-4 tablespoons dried oregano
  • 3 teaspoons fresh minced garlic
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/2 teaspoon fresh black pepper

directions

Mix dressing ingredients, let sit for a few hours in the fridge to blend flavors. Cut veggies and toss with dressing. Sprinkle with cheese. Yum.
