Greek Salad
The best greek salad and dressing! Be sure to use the very best ingredients!
ingredients
- Salad:
- 1 bag Cherry tomatoes (or any kind you like), cut in half
- 4-5 Persian cucumbers (Japanese work well too), cut in pieces
- 1/2 Red onion, sliced thin
- Handful Kalamata olives
- 1/2 c feta cheese, crumbled
- Optional: Romaine lettuce and bell peppers
- Dressing:
- 3/4 c. good olive oil
- 2-3 tablespoons fresh lemon juice
- 2-4 tablespoons dried oregano
- 3 teaspoons fresh minced garlic
- 2 tablespoons red wine vinegar
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1/2 teaspoon fresh black pepper
directions
Mix dressing ingredients, let sit for a few hours in the fridge to blend flavors. Cut veggies and toss with dressing. Sprinkle with cheese. Yum.
