CrispyPotato Roast
Makes a great presentation
ingredients
- 3 Tbls Unsalted Butter, melted
- 3 Tbls extra virgin olive oil
- 4 lbs Ruset Potatoes, peeled
- 4 Shallots, thickly sliced lengthwise
- Coarse Salt
- 1/2 to 1 tsp Red Pepper Flakes
- 8 sprigs Thyme

1. Preheat oven to 375. In a small bowl, combine butter & oil. Brush bottom of a 9-inch baking dish with some butter mixture. With a sharp knife or mandoline, slice potatoes very thinly crosswise.

2. Arrange potato slices vertically in dish. Wedge shallots throughout. Sprinkle with salt and Red Pepper flakes; brush with remaining butter mixture. Bake 1 1/4 hours. Add thyme and bake until potatoe are cooked thru, with a crisp top, about 35 minutes more
notes
I use a combination of red potatoes and Yukon Gold, and I leave the skins on the red potatoes - looks festive for the holidays. Thyme is optional. A mandoline is VERY helpful for this recipe - just be careful!!!
