Spoon Bread
from Clay: Almost like a pudding -- called spoon bread because you have to serve it with a spoon.
ingredients
- 1 c. white cornmeal
- 1 c. boiling water
- 4 T. butter
- 1 t. salt
- 1 egg, beaten
- 1 c. half-and-half (“rich milk” in the original)
- 1 1/2 t. baking powder

1. Preheat the oven to 375.

2. Pour the boiling water over the cornmeal and let sit for five minutes. Mix in the butter, salt, egg, baking powder, and half-and-half. Pour into a buttered pan and bake for 40 minutes, until golden brown on top. Serve immediately.
