Crock Pot Herb Crusted Beef Roast

Makes 4-6 servings

ingredients

  • 1 (2-3 lb) beef rump roast
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh oregano
  • 1/2 tsp diced rosemary
  • 1 tsp minced garlic
  • 1 tbsp oil
  • 6 slices thick cut bacon
  • 2 medium onions, quartered

directions

Rub the roast with salt and pepper. In a small bowl, combine the herbs, garlic, and oil and the press the mixture over the top and sides of the roast. Place the roast in the slow cooker. Place bacon over the top of the beef and tuck ends under bottom. Surround the roast with the onions. Cover and cook on low for 6 to 8 hours.

notes

I like to use dijon mustard or deli style dijon rubbed on the outside of the beef as well for extra flavor.
