Cornish Game Hens with Garlic and Rosemary
ingredients
- 4 cornish game hens
- 1 lemon, quartered
- salt and pepper
- 4 sprigs fresh rosemary
- 3 tbl olive oil
- 20 cloves garlic
- 1/3 cup white wine
- 1/3 cup chicken broth
- 2 packets gravy mix

1.Preheat oven to 450 degrees

2.Rub hens with 1 tbl of the olive oil, season with salt and pepper. Place 1 lemon wedge and sprig of rosemary in each cavity. Place garlic around hens, roast for 25 minutes.

3.Reduce oven to 350 degrees. In a mixing bowl whisk together wine, broth and remaining olive oil; pour over hens. Continue roasting for 25 minutes or until juices run clear. Baste hens with pan juices every 10 minutes.

4. Remove hens from pan and keep warm. Combined 2 packets of gravy mix and use the pan drippings as the water.
