Steak with Roasted potatoes and arugula
ingredients
- 1 1/2lb London Broil
- salt and pepper
- 1 1/2lb red potatoes, cut into wedges
- 2T olive oil
- 4 garlic cloves
- 1 bunch arugula, thick stems removed

Preheat 425.

On rimmed baking sheet toss potatoes, oil, garlic, 1/2t salt, and 1/4t pepper. Roast until golden 35-40 min. Toss with arugula.

Fifteen min before potatoes are done, heat oven proof skillet over med-high. Season steak with 1/2t salt and pepper. Brown, 3 min per side.

Transfer skillet to oven and cook 6-8 min for med-rare. Let rest for 5 min before slicing. Serve with potatoes and arugula.
