Wheat-free and endlessly variable.

ingredients

  • 3 c flour, any combo. Rice, barley, and corn work well together.
  • 2 T ground flax seed
  • 3 T kudzu or arrowroot powder
  • 5 t baking powder
  • 1/4 t salt
  • ***
  • 1 egg
  • 3 T oil (use 3/8 c for waffles)
  • 2 1/4 c liquid (any combo of milk, water, juice, beer)
  • 5 t sweetener
  • ***
  • optional (choose one or more):
  • 1 c blueberries or raspberries
  • 1/2 c chopped nuts
  • 1/4 c hemp seed
  • 1/2 cup carob or chocolate chips

    Mix together the dry ingredients.

    Whisk the wet ingredients together well.

    Combine the two gently; don’t over mix! Fold in optional ingredients.

    Cook on 350 deg. griddle or waffle iron, brushing between batches with coconut or other oil.

notes

These are great served with fruit syrup. Try different combos of fruit and nuts or seeds added to the batter. A bit of cornmeal added to the flour mix gives a nice texture. Leftovers are great heated in the toaster oven!
