Zucchini Bread

Ingredients

  • 3 eggs
  • 1 c. oil
  • 2 c. sugar
  • 3 tsp vanilla
  • 2 c. grated zucchini
  • 3 c. flour
  • 1 tsp salt
  • 3 tsp cinnamon
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 1 c. chopped nuts

    Beat eggs till foamy. Add oil, sugar, vanilla and zucchini and blend.

    Mix in flour, salt, cinnamon, baking soda, baking powder and nuts.

  • 3

    Bake in 2 greased and floured loaf pans at 325° for 1 hour.

  • 4

    Cool only 2 minutes; remove from pans.

Freezes well with good seal.
