Rhubarb Walnut Muffins
ingredients
- 1 1/2 c flour
- 3/4 c brown sugar
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/3 c vegetable oil
- 1 egg
- 1/2 c buttermilk
- 1 tsp vanilla
- 1 c chopped rhubarb
- 1/2 c chopped walnuts
- Topping:
- 1/2 c brown sugar
- 1/4 c chopped walnuts
- 1/2 tsp cinnamon

Preheat oven to 325 ° F.

Combine dry ingredients. Add wet ingreditents, mixing only until moist. Fold in rhubarb and walnuts. Combine topping ingredients and sprinkle over muffins. Bake for 20 to 25 minutes.
