Bran Muffins
ingredients
- 6 cups Kellogg’s Complete Cereal
- 2 cups boiling water
- 5 cups flour
- 1 teaspoon salt
- 5 teaspoons baking soda
- 3 cups sugar or 2 cups honey
- 1 cup oil (generous)
- 4 eggs
- 1 quart buttermilk
- 1 teaspoon cinnamon
directions
Mix 4 cups of cereal with boiling water; let soak a bit. Combine sugar, oil, eggs and buttermilk in a very large bowl. In a different bowl sift flour, salt and baking soda. To sugar mixture, add the flour mixture. 2 cups of cereal (not the soaking stuff) and all the soaked cereal. Fill muffin tins full. You can top with raisins and walnuts and sprinkle with white sugar. Bake 375° for about 20 minutes.

Batter lasts several weeks in the fridge.
