Daddy's waffles
Daddy used to make these waffles often when we were growing up. They were a family favorite. To be made in a normal waffle iron not a belgium, but are good in either.
ingredients
- 1 3/4 cups sifted all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoons salt
- 1 tablespoons sugar
- 3 eggs, separated
- 1 1/2 cups milk
- 7 tablespoons melted shortening or cooking oil
directions
Stir dry ingredients in a large mixing bowl. Combine egg yolks and blend well; then stir them into the dry ingredients. Stir in cooking oil. Beat egg whites until they form stiff peaks. Carefully fold egg whites into the mixture, leaving a few little fluffs. DO NOT over mix. Bake in preheated waffle maker.
