Crockpot Mexican Pork
Easy pork dish.
ingredients
- 1 small pork tenderloin
- 1 pack of dry taco seasoning
- 1 can of chopped green chilis
- 1 can of black beans (rinsed and drained)
- 1 can of diced tomatoes (Optional)
- Soft tortilla shells
- Sour cream
- Lettuce
directions
Put pork tenderloin in middle of crockpot. Pour black beans around the meat. Then top the beans with the tomatoes and chilis. Pour dry taco seasoning over the top of everything. Set crockpot to cook 4 hours on high. With a small loin I usually keep an eye on it so it doesnt over cook. After meat is done, pull meat out of crockpot and put on a plate. Shred meat and stir back into crockpot. Spoon micture over soft taco shells and add your favorite fillings. Serve with spanish rice.
