Fresh Okra & Tomatoes
A Southern Tradition
ingredients
- 8 slices of bacon
- 1 lb. sliced okra
- 3/4 cup chopped onion
- 2 Tbsp. minced garlic
- 4 chopped Roma tomatoes
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/2 tsp. Tony’s Seasoning
- 2 Tbsp. white vinegar

1. Cook bacon over medium heat until crisp. Remove bacon, reserving 3 Tbsp. drippings in skillet. Crumble bacon and set aside.

2. Add okra, onion and garlic to drippings; cook 2 minutes, stirring constantly. Add vinegar to cut “slime” from okra, continue to cook.

3. Add tomatoes and remaining 3 ingredients. Cover and simmer 15 to 20 minutes or until okra is tender, stirring occasionally.

4. Sprinkle with crumbled bacon.
