KOREAN RICE AND VEGETABLE MEDLEY...A BLACKMAN FAVORITE... EXCEPT FOR SHERRY!

- 4 TSP LOW SODIUM SOY SAUCE
- 1/2 TSP MINCED PEELED FRESH GINGER
- 4 GARLIC CLOVES MINCED
- 4 OZ OF STEAK THINLY SLICED, BOCA MEAT OR TOFU
- COOKING SPRAY
- 1 CUP JULIENNE-CUT CARROT
- 1 CUP JULIENNE-CUT ENGLISH CUCUMBER
- 2 1/2 TSP SESAME SEEDS
- 1/2 TSP RICE VINEGAR
- 1/2 TSP KOSHER SALT (SEPARATED AMONG VEGETABLES)
- 3/4 TSP DARK SESAME OIL
- 4 LARGE EGGS DIVIDED
- 3 CUPS HOT COOKED SHORT-GRAIN RICE
- 1 CUP THINLY SLICED SHIITAKE MUSHROOMS CAPS
- 1 CUP SEASONED SPINACH (2 10 OZ)
- 4 TSP CHILI PASTE
- CRUSHED RED PEPPER
- OPTIONAL KIMCHEE

1-COMBINE 2 TSP SOY SAUCE, 1/2 TSP MINCED GINGER, I GARLIC CLOVE MINCED AND YOUR MEAT OR TOFU IN A ZIP TOP PLASTIC BAG. SEAL AND MARINATE FOR 30 MINUTES COOK OVER MEDIUM HEAT WITH COOKING SPRAY. STIR FRY TIL DONE.

2-BOIL CARROTS IN WATER UNTIL CRISP-TENDER. DRAIN AND RINSE. COVER WITH SESAME OIL AND SESAME SEED. SET ASIDE.

3-COMBINE CUCUMBER WITH WITH ONE MINCED GARLIC CLOVE, SESAME SEEDS, RICE VINEGAR, KOSHER SALT, CRUSHED RED PEPPER AND SESAME OIL.

4- COOK SPINACH IN PAN WITH COOKING OIL UNTIL WILTED. ADD GARLIC, SESAME SEEDS KOSHER SALT AND SESAME OIL.

5- COOK EACH EGG OVER MEDIUM HEAT FOR ABOUT 2 MINUTES AND SPRINKLE WITH SALT.

6-COOK YOUR RICE ACCORDING TO DIRECTIONS. SPOON 3/4 CUP RICE INTO EACH OF THE 4 BOWLS. ARRANGE 1/4 CUP OF YOUR MEAT (OR SUBSTITUTE), CARROT, CUCUMBER MIXTURE, MUSHROOMS AND SEASONED SPINACH OVER EACH SERVING. TOP EACH WITH AN EGG AND CHILI PASTE.

SERVE WITH CHILI PASTE AND SOY SAUCE ON THE SIDE...ALSO KIMCHI IS DELICIOUS AS AN EXTRA. SPICY...EAT INDIVIDUALLY OR MIX IT ALL TOGETHER. EITHER WAY, TAKE LIBERTY AS YOU ADD YOUR INGREDIENTS AS IT IS A VERY FLEXIBLE DISH.
