A Healthy Apple Cobbler
A cobbler that uses apple juice and maple syrup, not sugar.
ingredients
- 7 Fuji apples, thinly sliced
- 2 T lemon juice
- 3/4 cup raisins
- 1 1/2 t cinnamon, divided
- 4 T maple syrup, divided
- 7 T apple juice, divided
- 6 T whole wheat flour, divided
- 3/4 cup old fashioned rolled oats
- 1 cup walnuts, chopped
- 1 pinch salt

Place apples in a bowl with lemon juice; toss. Add raisins, 1 t cinnamon, 2 T maple syrup, 4 T apple juice and 1 T flour.

Toss ingredients together and place in a 2 quart baking dish. Cover dish with foil and bake for 45 minutes.

Remove baking dish from oven. To prepare topping, in a bowl, add oatmeal, walnuts, 5 T flour, 1/2 t cinnamon, 2 T maple syrup, 3 T apple juice and salt. Mix ingredients together and sprinkle over the hot apples.

Place back in oven, uncovered. Bake for 35 minutes. Remove and let cool slightly before serving.
