Salmon Croquettes
Another favorite dish for Tuesday afternoon Mah Jongg games at Fay’s house! Serve with a green salad and top off with Fay’s famous rugelach or mandlebret for dessert. What a special treat!
ingredients
- 12 ounces salmon, canned
- 2 medium boiled potatoes
- 2 large eggs
- 1/2 cup matzo meal
- 1/2 cup oil
- salt and pepper
directions
Boil potatoes, mash & cool. Drain, bone, skin and mash salmon. Add mashed potatoes, salt, pepper and eggs, mix well. Form patties and coat well with matzo meal. Refrigerate overnight. Before frying can re-dip into matzo meal. Fry until golden brown. Delicious!
Note: Can use 1/2 cup potato flakes with 1/2 cup water in place of boiled potatoes.
