Another favorite dish for Tuesday afternoon Mah Jongg games at Fay’s house! Serve with a green salad and top off with Fay’s famous rugelach or mandlebret for dessert. What a special treat!

ingredients

  • 12 ounces salmon, canned
  • 2 medium boiled potatoes
  • 2 large eggs
  • 1/2 cup matzo meal
  • 1/2 cup oil
  • salt and pepper

directions

Boil potatoes, mash & cool. Drain, bone, skin and mash salmon. Add mashed potatoes, salt, pepper and eggs, mix well. Form patties and coat well with matzo meal. Refrigerate overnight. Before frying can re-dip into matzo meal. Fry until golden brown. Delicious!

Note: Can use 1/2 cup potato flakes with 1/2 cup water in place of boiled potatoes.

Salmon is delicious with exceptional nutritional value found in few other foods. It is low in calories and saturated fat, yet high in protein, and contains a unique type of health-promoting fat, omega-3 essential fatty acids.
