Mini Meat Loaves

I love these mini meatloaves! You can freeze any cooked meatloaves you have left over-just bake them at 350 degrees for about 45 minutes.
ingredients
- For the Glaze:
- 1 cup ketchup
- 1/4 cup packed light brown sugar
- 1 1/2 Tablespoons cider vinegar
- For the mini meat loaves:
- 1 Tablespoon olive oil
- 2 celery ribs, finely chopped
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 cup sour cream
- 1 cup fresh bread crumbs
- 1 large egg, beaten
- 1/4 cup whole milk
- 1/4 cup chopped parsley
- 2 Tablespoons Dijon mustard
- 2 1/2 teaspoons salt
- 1 1/2 teaspoons dried thyme
- 1 teaspoon freshly ground black pepper
- 1 pound ground chuck
- 1/2 pound ground pork
- 1/2 pound ground veal or turkey

1. Make the glaze by combining the ketchup, brown sugar and vinegar. Set aside

2. Preheat the oven to 350 degrees, oil a foil-lined baking sheet

3. Heat the oil in a medium skillet over medium heat. Add the celery,onion, and garlic and cook, stirring until the vegetables have softened, about 5 minutes. Transfer to a bowl, stir in 1/4 cup of the glaze and let cool

4. Add the sour cream, bread crumbs, egg, milk, parsley, mustard, salt, thyme and pepper and stir until combined. Add the chuck, pork, and veal/turkey and combine well.

5. Scoop mixture onto baking sheet using 1/2 cup measure. Shape into 12 ovals. Divide the remaining glaze over the tops of the loaves.

6. Bake 35-40 minutes or until an internal thermometer reads 155 degrees.
