Zucchini , Red Pepper and Canadian Bacon Frittata
ingredients
- 1 Tbsp of olive oil
- 1 shallot minced
- 4 slices of Canadian bacon diced
- 1 small zucchini diced
- 1/2 red pepper diced
- 1 carton of egg beaters or 8 eggs
- salt and pepper
- 1/2 tsp of thyme
- 1/2 cup of shredded Colby or Pepper Jack cheese

Preheat oven broiler.

In a large oven ready saute pan, saute shallot in olive oil. Fry the Canadian bacon, zucchini and red pepper until vegetables on softened, about 3 minutes.

Pour egg beaters over mixture, sprinkle on thyme, salt and pepper.

Cover and lower temperature to medium. Cook for 3 minutes or until egg mixture is solid on the bottom.

Remove cover and place in oven directly under broiler. Cook for 3 minutes until top is solid. Add shredded cheese and place under broiler for an additional minute.

Slice into 2-3 wedges. Optional: Serve with eggplant and red pepper spread.
