Rice and Beans
ingredients
- 2 cans pink beans
- 1 8oz can tomato sauce
- 2 cups water
- 1 medium onion, diced
- 2-3 cloves garlic, minced
- 1/2 tsp basil
- 1/2 tsp oregano
- 2 tbsp Recaito
- 2 tbsp olive oil
- capers or green olives in juice
- 2 small potatoes cubed (optional)

Saute onion and garlic in oil on low heat so as to not burn garlic. Add Recaito and tomato sauce. Cook for 5 minutes. Add water, beans with liquid, basil, oregano, olives/capers and juice, and potatoes. Bring to a boil, cover, and simmer for 1/2 hour.

Serve over rice.
