NONA' RAVIOLIS
My Italian grandmother’s famous ravioli recipe handed down through the generations.
ingredients
- 20 oz chopped frozen spinach
- 1 Jimmy Dean sausage
- 2 lbs of lean hamburger
- 1 small onion
- 2 tablespoons olive oil
- Add spices: salt, pepper, and other seasonings.

In large pan saute all. Do not overcook. Add after sauteeing - not during.

Add above - heat for few minutes. Then: Add 2 lbs ricotta

1/2 cup parmesan cheese

Mix throughly and let set for 24-36 hrs. Add spices.

FOR PASTA:

small amount of water

Roll out thin. Use a glass to cut dough to make ravioli. Fill with above filling. Boil in salted water until al dente. Add your favorite marinara sauce or pest sauce. Goes well with chanterelle mushrooms.
notes
You need a day to do this but take the time and make a bunch with your friends. Drink a good bottle of wine and freeze the raviolis for use later.
