BASIC TOMATO SAUCE WITH MEAT BALLS

My tomato sauce is never made the same. I don’t measure so the recipe is only approximations. Don’t forget to add love.
ingredients
Sauce- 3 Tbsp Olive Oil
- 1 large chopped onion
- 6-8 pork neck bones
- 4-5 29 oz cans of crushed tomatoes and equal amount of filtered water
- 1-2 small cans of tomato paste diluted with equal amount of water
- 2 bay leaves
- 1 Tbsp of oregano
- 1 tsp of crushed red pepper
- 2 tsp of sea salt
- 1 tsp of ground pepper
- 3-5 peeled carrots or 1 sweet potato(helps remove acid)
- 1/2 head of garlic, chopped and fried
- 4 lbs of mixed chopped meat (beef,pork and veal)
- 12 eggs (4/lb per grandma)
- 1 cup of grated Romano cheese
- 1/2 cup of seasoned bread crumbs
- 1 tsp of seasoned salt
- 3 Tbsp of fresh parsley
- 1 Tbsp of oregano
- 1 Tbsp of Cajun spice mix
- 1 tsp of ground pepper
- 1 tsp of celery seed

Sauce

Heat olive oil in a large stock pot. Add onions and saute until translucent. Brown pork neck bones and then add crushed tomatoes, paste, spices and water. Bring to boil. Add meat balls and then simmer.

Cook for 2-3 hours.
Meat Balls
In a large mixing bowl add meat, eggs, cheese, bread crumbs and spices. Thoroughly mix with hands and form into balls. Fry with olive oil on skillet until brown on both sides. Add to sauce. Lastly fry the chopped garlic and add to sauce.
Freeze
Freeze 4-5 portions each with 8 ladles of sauce and 4 meat balls for a later date.
notes
you can use egg beaters as a substitution for eggs: one carton equals 8 eggs
