Asian Grilled Pork Tenderloin with Pineapple
ingredients
- 2 (3/4 pound) pork tenderloin
- 1 (6oz) can pineapple juice
- 3 tablespoons soy sauce
- 2 tablespoons minced fresh garlic
- 2 tablespoons minced fresh ginger
- 1 1/2 teaspoons coarse kosher salt
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon ground black pepper
- 2 cups fresh pineapple, cut in 1-inch cubes
- 8 wooden/metal skewers

1. Place pork in resealable plastic bag. In a small bowl, combine marinade ingredients; poor over pork. Seal bag; refrigerate for at least 1 hour to marinate (up to 24 hours).

2. Preheat grill to medium-hot. Remove pork from marinade and place on grill. Cook, covered, for 10 minutes per side.

3. Meanwhile, place pineapple on skewer. Grill during the last 6 minutes of grilling time, turning after 3 minutes.

4. To serve, slice pork into 1/2 inch medallions and serve with pineapple.
