Mom's Lasagna

This is a very simple & easy recipe. Make with cheese only, or add a meat of your choice: ground turkey, italian sausage, ground beef, whatever! Serve with a big green salad and a warm loaf of french bread and you’ve got a fabulous meal!

- 1 pound lasagna noodles
- 55-70 ounces of spaghetti sauce*
- 2 pounds ricotta cheese
- 2 pounds mozzarella cheese, shredded
- 3 eggs
- If desired, grated Parmesan & Romano cheeses
- Optional, meat of your choice (I love it with italian sausage!).

Preheat Oven to 350 degrees.

Cook lasagna noodles as directed, drain & cool slightly.

While noodles are cooking, slightly beat eggs, then add & mix together with ricotta cheese. If you like add a few ounces of parmesan & romano cheese in this bowl.

If you are adding meat, cook and drain fat.

When noodles are cool enough to handle, start assembling the lasagna. Spoon a thin layer of spaghetti sauce at the bottom of a lasagna pan (about 10 x 18 or so - it doesn’t have to be exact!) Next, place down a layer of noodles, overlapping them a bit. Next a layer of ricotta cheese, (if you’re using meat, add al layer of meat here) and then a layer of shredded mozzarella cheese. Repeat 2-3 times until you have used all the noodles. Make sure all layers of noodles have sauce (and ricotta mixture if possible) and mozzarella cheese on top. Top should be the remaining mozzarella cheese.

Bake for 45 -60 minutes or until heated through. You should see some bubbling of the sauce. If the top starts to get too dark, over with non-stick aluminum foil. If you don’t have non-stick, stick some toothpicks into the lasagna and tent some aluminum foil over the top.

Let sit for 15 minutes before cutting into pieces.
