Pumpkin Ravioli
ingredients
- 20 oz pure pumpkin (not pie filling, use ED Smith)
- 2 cups parmesan cheese grated
- 20 amaretti cookies, ground fine
- Salt and pepper
- 2 pkgs Wonton Wrappers
- 1/2 cup butter
- 1/4 cup fresh sage
directions

Mix pumpkin, cheese, amaretti, salt and pepper together (This should look like a tomato paste)

Place approx 1 tsp of the filling in the wrappers.

In a large pot, have boiling salted water, place the wontons in the water and boil for approx 5 minutes.

In a sauté pan, melt the butter with the sage.

To serve place wontons on a platter and pour butter and sage mixture over.
