Soup - Gazpacho
Cold ! This is an old standby favorite of mine and a quick way to make a classic summer soup. It takes only seconds to make it in a blender, yet this version has all the rich flavor of Spanish Gazpacho.
ingredients
- 1 clove garlic, peeled
- 4 ripe tomatoes, cut into eights
- 1/2 green pepper, seeded and sliced
- 1/2 small onion, peeled and sliced
- 1 English cucumber, peeled and coarsely cut
- 1 Tsp. salt
- 1/4 Tbs. olive oil
- 3 Tbs. wine vinegar
- 1 tsp. balsamic vinegar
- Dash of Tabasco
- .
- Condiments:
- Chopped cucumber, green onion, green pepper, peeled ripe tomato.
- 1/2 C. ice water

Put all ingredients into blender - in the order listed.

Cover and blend on high for 5-10 seconds, or until ingredients are finely chopped.

Chill thoroughly.

Pour into serving bowls.

Serve with side dishes of chopped condiments and sliced unpeeled cucumber.
