Cold ! This is an old standby favorite of mine and a quick way to make a classic summer soup. It takes only seconds to make it in a blender, yet this version has all the rich flavor of Spanish Gazpacho.

ingredients

  • 1 clove garlic, peeled
  • 4 ripe tomatoes, cut into eights
  • 1/2 green pepper, seeded and sliced
  • 1/2 small onion, peeled and sliced
  • 1 English cucumber, peeled and coarsely cut
  • 1 Tsp. salt
  • 1/4 Tbs. olive oil
  • 3 Tbs. wine vinegar
  • 1 tsp. balsamic vinegar
  • Dash of Tabasco
  • .
  • Condiments:
  • Chopped cucumber, green onion, green pepper, peeled ripe tomato.
  • 1/2 C. ice water

directions

    Put all ingredients into blender - in the order listed.

    Cover and blend on high for 5-10 seconds, or until ingredients are finely chopped.

    Chill thoroughly.

    Pour into serving bowls.

  • 5

    Serve with side dishes of chopped condiments and sliced unpeeled cucumber.
