Dorothy's Banana Fruit Bread
In the eighties, Dorothy made this recipe for gifts. It is spectacularly good.
ingredients
- 1 cup margarine
- 1 cup white sugar
- 3 eggs
- 5 large bananas, ripe and mashed
- 4 cups all-purpose flour
- 2 teaspoons baking soda
- 1/2 cup chopped pecans or walnuts
- 1/2 cup maraschino cherries, chopped
- 1/2 cup semi-sweet chocolate chips
- 1 teaspoon vanilla
- 3/4 teaspoon salt

Cream shortening with sugar, beating well. Add egg; beat well. Add bananas, and mix until smooth.

Reserve 1 Tablespoon flour.

Combine remaining flour, baking soda, and salt; add to creamed mixture. Stir in vanilla. Dredge pecans in reserved tablespoon of flour; stir into batter. Stir in chocolate chips and cherries by hand.

Divide batter among 3 greased and floured 7x3 1/2" loaf pans. Bake at 350° for 45 minutes. Cool in pan 10 minutes. Remove from pan, and cool completely on wire rack.

Wrap and store in refrigerator. Freezes well.
