Cranberry Jello Salad

ingredients

  • 2 Small(or 1 Large) Packages Lemon Jello
  • 1/2 Cup Sugar
  • 1/2 Cup Chopped Walnuts
  • 20 Ounce Can Crushed Pineapple (Drained, Reserve Juice)
  • 1 Bag Fresh Cranberries
  • 2 Apples (With Skins)

directions

Coarsely grind cranberries in a food processor. Dice apples. Combine cranberries, apples, walnuts and sugar; set aside. Use 2 cups of hot water to dissolve jello completely. Combine enough cold water with reserved pineapple juice to make 1/2 cup liquid and add to the dissolved jello. Pour jello into a 13 x 9 pan and add the cranberry mixture. Refrigerate overnight.

Fresh cranberries store well in the freezer. Serve cut pieces of jello atop bed of lettuce with dollop whipped cream
