Beans a la Charra

I just love pinto beans....especially with a bunch of extra junk in them...

ingredients

  • 4 cups dried pinto beans
  • Chunk of salt pork
  • 2 cloves crushed garlic
  • 2 fresh tomatoes, diced
  • 1 medium onion, chopped
  • 1 bunch fresh cilantro, finely chopped
  • Salt and pepper (to taste)
  • Chili powder (to taste)

directions

Sort through beans by hand, removing any rocks or clumps that don’t belong. Place beans and salt pork into stockpot. Add enough water to cover beans with an extra 2 inches on top....cover and bring to a boil. Leave the stockpot on stove, but turn the heat off. Let the beans sit for 1 hour. Bring back to a boil, then reduce heat to a simmer. Continue simmering until beans are starting to get tender....about 1-2 hours. Add remaining ingredients....simmer for another 30-60 minutes.

notes

If beans absorb too much water after the 1 hr resting, add hot tap water. If they need water later in the cooking process, add only boiling water.
