Bran Muffins my mom used to make.

ingredients

  • 3 c. sugar
  • 1 c. shortening
  • 5 t. baking soda
  • 1 T salt
  • 4 eggs, beaten
  • 2 c. water, boiling
  • 6 c. 100% Bran
  • 1 qt. buttermilk
  • 5 c. flour

directions

    Pour water over bran items, shortening and sugar. Add eggs and milk. Stir dry ingredients together and add to liquid mixture. Stir just until mixed. Add raisins if desired. Refrigerate until ready to use. Keeps 6-8 weeks in refrigerator.

    When ready to prepare, scoop batter into muffin tins lined with paper. Bake 350 25 minutes.
