Apple Pudding
A recipe I first started making when I was a little girl. Easier than making a pie for those young bakers.
ingredients
- 5-6 tart apples (Granny Smith type)
- 1/4 c. sugar
- 1/2 t. cinnamon
- 1/4 t. nutmeg
- 2 T butter
- 1/4 c. hot water
- Batter:
- 1 egg
- 1/2 c. sugar
- 2 T. melted butter
- 1/3 c. flour
- 1 t. baking powder
- pinch salt

Peel,core and slice apples. Arrange in the bottom of a 6 cup casserole that has been sprayed with cooking spray. Sprinkle with sugar, cinnamon and nutmeg. Dot with butter and pour hot water over all.

Batter: Beat egg; add sugar gradually; beating until thick. Stir in melted butter. Sift flour with baking powder and salt. Fold the dry ingredients into the egg mixture and spread on top of apples. Bake 1/2 hour at 375. Reduce heat to 350 and bake 10 minutes more. Serve hot. Very good with lemon sauce or cream.
