Apple Pudding

Makes 4-6 servings
ColleenColleen

A recipe I first started making when I was a little girl. Easier than making a pie for those young bakers.

ingredients

  • 5-6 tart apples (Granny Smith type)
  • 1/4 c. sugar
  • 1/2 t. cinnamon
  • 1/4 t. nutmeg
  • 2 T butter
  • 1/4 c. hot water
  • Batter:
  • 1 egg
  • 1/2 c. sugar
  • 2 T. melted butter
  • 1/3 c. flour
  • 1 t. baking powder
  • pinch salt

directions

  • 1

Peel, core and slice apples. Arrange in the bottom of a 6 cup casserole that has been sprayed with cooking spray. Sprinkle with sugar, cinnamon and nutmeg. Dot with butter and pour hot water over all.

  • 2

Batter: Beat egg; add sugar gradually; beating until thick. Stir in melted butter. Sift flour with baking powder and salt. Fold the dry ingredients into the egg mixture and spread on top of apples. Bake 1/2 hour at 375. Reduce heat to 350 and bake 10 minutes more. Serve hot. Very good with lemon sauce or cream.
