Jenny's Potato Latkes
An essential yummy food for Hanukkah! Serve them hot with apple sauce and sour cream.
ingredients
- 5 large potatoes
- 2 eggs
- 2 tablespoons flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 small onion (grated)
- vegetable oil as needed for frying

Peel the potatoes, grate them on a fine grater and drain off most the liquid. Beat the eggs and add them to the potatoes.

Add the dray ingredients and the onion, and mix the batter well.

Heat the oil in a skillet and drop the batter by tablespoons into the hot oil. I spread them out as they fry so they are a little thinner. Fry the latkes on both sides until they are brown.
