Stuffed Green Pepper Soup
Delicious!
ingredients
- 1 lb ground turkey (turkey makes the soup a little healthier, but use beef if you prefer)
- 2 green peppers (chopped)
- 1 onion (chopped)
- 2 cloves of garlic minced (or garlic salt)
- 1 – 28 oz can diced tomatoes
- 1 – 28 oz can tomato sauce
- 1 can beef broth (gives it a beef flavor or you can use vegetable broth)
- 1/2 cup water
- 1 – 2 cups of cooked long grain rice or brown rice (easy tip: use the rice in a bag you can heat in the microwave)
- Olive oil
- Salt, pepper, garlic salt
directions
Brown the ground turkey in some olive oil and add salt, pepper and garlic salt to the meat. Half way through add the onions, garlic and green peppers. After the meat is browned and the onions and peppers are soft I usually put it in a crock pot and then add the rest of the ingredients and let it cook on low all day.
