Eggplant Rustico

A delicious variation on the classic eggplant parmigiano.

ingredients

  • 4 large eggplants
  • 4 pints cherry tomatoes
  • 10-12 Garlic cloves
  • Extra Virgin Olive Oil
  • 2 8oz. packages of Mozzarella
  • 8 oz. Pecorino Romano Cheese
  • 1 lb. Panko breadcrumbs
  • 1 Egg
  • Salt & Pepper
  • Fresh Basil Leaves

directions

Place cherry tomatoes and garlic cloves in baking pan, cover with olive oil, salt, and pepper. Roast tomatoes and garlic for 20 minutes at 400°. Slice eggplant into thick rings, egg wash and dip in seasoned bread crumbs. Pan fry battered eggplant until golden brown. Layer roasted tomatoes, garlic cloves, eggplant, basil leaves, and cheese until pan is full. Bake casserole until golden brown, about 30 minutes.
