Light Crisp Waffles
The very best waffles! Dedicated to my ’perfect little waffle’ sister.
ingredients
- 3/4 cup all purpose flour
- 1/4 cup cornstarch
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 1/4 tsp. baking soda
- 3/4 cup buttermilk
- 1/4 cup milk
- 6 tbsp. vegetable oil
- 1 egg, separated
- 1 tbsp. sugar
- 1/2 tsp. vanilla

Heat oven to 200°. Mix dry ingredients in medium bowl. Measure milks and oil in a small bowl; mix in egg yolk and set aside

Beat egg white with a mixer in a small bowl until almost small peaks, sprinkle in sugar and continue beating until white and glossy. Beat in extract.

Pour wet ingredients into dry and whisk just until mixed; add egg white to batter in dollops, while folding in until just incorporated.

Add batter to hot waffle iron and cook until crisp and brown set waffle directly on wire rack in oven to keep it warm and crisp (at least 5 and up to 20 min.)

Repeat with remaining batter

variations: Add 1/2 c. choc. chips; 1/4 c. wheat germ; 1/2 c. cornmeal can be added in place of 1/2 c. flour; 2 tsp. finely grated orange zest and 1/2 c. chopped dried cranberries.
