African Curry Chicken

Serve sauce over rice or cous cous with any or all of the toppings:

ingredients

Sauce
  • 4 Slices Bacon
  • 1/4 Cup Onion, Minced
  • 1/4 Cup Celery, Minced
  • 1 Clove Garlic, Minced
  • 2 Tbs. Flour
  • 1 Cup Milk
  • 1 Cup Water
  • 1/2 Cup Applesauce
  • 3 Tbs. Tomato Paste
  • 3-4 tsp. Curry Powder
  • 2 Cubes Chicken Boullion, Crushed
  • 3 Cups Cooked Chicken, Chopped
Optional Toppings
  • Onions
  • Green Peppers
  • Tomatoes
  • Cucumbers
  • Peanuts
  • Raisins
  • Crushed Pineapple
  • Coconut
  • Dried Bananas

    Brown bacon in pan. Saute onion, celery, & garlic in bacon drippings. Mix flour, crushed boullion, & curry powder into this. Add remaining ingredients (except chicken), blending each one well as you add them.

    When thickened, add chicken and simmer 15-30 minutes.
