Teriyaki Salmon Over Pasta
ingredients
- 8 ounces pasta
- 1 teaspoon extra-virgin olive oil
- 6 medium mushrooms,wiped clean and sliced
- 1 garlic clove, minced
- 1 teaspoon low-sodium soy sauce, or more to taste
- 1/2 teaspoon freshly grated ginger
- 1 (7.5-ounce) can pink salmon, drained

Bring a large pot of water to a boil. Salt the water and add the pasta; cook according to the package directions. Drain and set aside.

Heat the oil in a large skillet over medium heat. Add the mushrooms and garlic and sauté until the mushrooms begin to soften and release their liquid, about 8 minutes. Season with the soy sauce and ginger. Mix well. Increase the heat to medium-high and cook for 3 minutes longer.

Mix in the salmon, adding more soy sauce to taste. Add the cooked pasta and stir well. Cook for 2 minutes longer, stirring constantly. Serve hot.
