Red Beans and Rice
Old favorite Southern dish
ingredients
- 1 # dry kidney beans
- 1 can coke and plenty of water to soak beans
- 1 large onion, chopped
- 1 cup chopped celery and tops
- 1 large bell pepper, chopped
- 2 ham hocks or 1 meaty ham bone with leftover ham
- 1 # smoked sausage, sliced
- 1 bay leaf
- 1 Tbsp chili powder
- 1 tsp sugar
- 2 jalapeno peppers, canned
- 1 (12 oz)can tomato sauce
- 1 can Rotel tomatoes
- Seasoned salt
- Seasonings to taste

Rinse and soak beans overnight in large bowl covered with water and 1 can of coke. Rinse beans and discard water. In large pot place beans, vegetables, ham bone or ham hocks with any leftover ham. Cover with 2 qts. water. Add jalapenos and seasonings. Cook on low heat 2-3 hours. Add tomato sauce and Rotel tomatoes. Cook another hour or until thickened. Add sliced sausage. May need to mash a few of the beans. Season to taste. Serve over steaming rice.
