Tricolor pepper steak
ingredients
- 4 tsp canola oil
- 1.25 lbs top round, london broil or flank steak thinly sliced
- 5 lrg peppers
- 1 lg. onion sliced in half moons
- 4 cloves garlic, sliced
- 1.25 low sodium beef broth
- .75c dry red wine
- 3 tbsp soy sauce
- .5 tsp pepper
- 1.5 tsp cornstarch disvolved in .25 c cold water
- 3 c rice

1. heat 2 tsp oil in skillet. add beef and cook until brown, 5 mins

2. heat reamining oil in same skillet. add peppers and onion and cook for 5 mins. add garlic and continue cooking about 5 mins more.

3. return beef and juices to skillet and add broth, wine, soy, pepper. bring to boil. reduce heat and simmer until liquid reduces by half, about 5 mins. stir in the disoved cornstarch and cook until thickens about 2 mins. serve over rice
