Fudge Roll
ingredients
- 2 cups chopped nuts
- 1 batch Smooth Chocolate Fudge
- 1 batch Blonde Fudge
- SMOOTH CHOCOLATE FUDGE
- 1/4 cup Butter
- 3 ounces unsweetened Chocolate (or 1 oz semisweet and 2 oz unsweetened)
- 1 pound Confectioner’s Sugar
- 1/3 cup instant, nonfat dry Milk
- 1/2 cup light Corn Syrup
- 1 tbsp Water
- 1 tsp Vanilla
- 1/2 cup chopped Nuts
- BLONDE FUDGE
- 1/4 cup Butter
- 1 pound Confectioner’s Sugar
- 1/3 cup instant, nonfat dry Milk
- 1/2 cup light Corn Syrup
- 1 tbsp Water
- 2 tsps Vanilla

Butter an 8-inch square pan

Melt butter and chocolate in top of a 2-quart double boiler or saucepan over boiling water

Meanwhile, sift confectioner’s sugar and nonfat dry milk together - set aside

Stir corn syrup, water, and vanilla into chocolate mixture over boiling water

Blend in sifted dry ingredients, one-half at a time, stirring each time until mixture is well blended and smooth

Remove from boiling water

Mix in nuts

Turn into the pan, let cool

Cut into squares

BLONDE FUDGE

Butter an 8-inch square pan
- 13
Melt butter in the top of a double boiler over hot water

Meanwhile, sift confectioner’s sugar and nonfat dry milk together- set aside

Stir corn syrup, water, and vanilla into butter, over boiling water

Blend in sifted dry ingredients, one-half at a time, stirring each time until the mixture is well blended and smooth

Remove from heat and turn into the pan, allow to cool

FUDGE ROLL ASSEMBLY

Wax paper the bottom of an 11“x17” pan
- 20
Make the blonde fudge first, let it set in the 11“x17” pan

Cut in half lengthwise

Once set, roll each half (use wax paper to help)

In another 11“x17” pan (also lined with wax paper), sprinkle 1/2 - 1 cup of chopped nuts on the wax paper

Pour the smooth chocolate fudge on top of the nuts

Let the chocolate fudge set for a few minutes

Lift chocolate fudge out of pan and cut lengthwise

Take the rolled blonde fudge and put it on top of the chocolate fudge, roll chocolate fudge over blonde fudge
