Grouper Piccata


Fresh Florida Grouper sauted in a lemon, garlic, and caper sauce...

  • 1 pound of fresh yellow grouper
  • 1 cup milk
  • 1/2 cup flour
  • 3 tablespoons of olive oil
  • 1 clove garlic, minced
  • 1 lemon, juice and zest of one lemon
  • 1 cup of white wine
  • 1/2 cup of chicken broth
  • 4 tablespoons of butter
  • 3 tablespoons capers
  • Salt and Pepper to taste

    Preheat oven to 350 degrees.

    Preheat a nonstick pan over medium and add olive oil.

    Rinse off grouper.

  • 4

    Dip in milk and then into seasoned flour (add a pinch of salt and pepper).

    Place in pan and sear both sides until golden brown, approximately 1-2 minutes per side.

    Transfer to a baking sheet and place in oven to warm and finish cooking. Approx. 5-7 minutes.

    Back in pan add wine, lemon zest, lemon juice, and garlic. Stir and simmer until reduced in half.

    Add chicken broth, butter, and capers. Stir. Feel free to add more butter if a creamier outcome is desired.

    Once thoroughly blended remove grouper from oven and add back to the pan for approximately 2-3 more minutes.

    Place grouper on two plates and spoon sauce over it.

Nothing tastes better than fresh Grouper bought right off the docks on the Gulf side of Florida.... Just be careful, you might still find a few bones.
