A crunchy, colorful, and flavorful alternative to coleslaw.
ingredients
- 2 pkgs of Ramen noodles (any flavor but I use Oriental flavored)
- 2 8 oz pkg tri-colored slaw mix
- 1 c sliced almonds
- 1 c sunflower seeds
- 1-2 bunches scallions
- 1/2 c sugar
- 3/4 c oil
- 1/3 c white vinegar
- seasoning mix from Ramen

Put noodles into Ziploc bag and break into small pieces. Place noodles on bottom of large bowl. Toast almonds and set aside to place on salad last. Combine slaw mix, sunflower seeds and scallions. Place this mixture over noddles and top with toasted almonds.

Combine dressing ingredients and blend well with blender or food processor. Pour dressing over top, cover with plastic wrap and refrigerate overnight.

Mix well before serving.
notes
Good dish to prepare in advance for company. Also good left-over the following day. Given to me by a church member.
