Stir-Fried Beef, Broccoli and Yams
ingredients
- 1/4 cup water
- 3 tablespoons brown sugar
- 3 tablespoons oyster sauce
- 1/4 teaspoon dried crushed red pepper
- 1 lb flank steak cut in half lengthwise then crosswise into 1/4 inch-thick slices
- 1/5 tablspoons corn starch
- 2/5 tablespoons ASian sesame oil, divided
- 4 cups broccoli florets
- 1 yam peeled, cut in half lengthwise, then crosswise into 1/3 inch-thick slices
- 2 teaspoons chopped ginger

1) Stir first 4 ingredients in a small bowl until sugar dissolves. Set sauce aside

2) Place beef in large bowl and sprinkle with salt and pepper. Add cornstarch and toss to coat

3) Heat 1.5 tablespoons oil in a large wok over high heat

4) Add beef mixture and stir fry until no longer pink outside (~3 min)

5) Transfer beef into a medium bowl

6) Heat remaining 1 tablespoon oil in same wok. Add broccoli, yam and ginger. Toss to coat; sprinkle with salt and pepper. Add sauce. Cover, reduce heat to med-high and cook until veg are just tender (~5 min)

7) Add beef mixture, toss until sauce coats beef (~ 1 min) and serve
