Herbed Goat Cheese and Rotini Salad
ingredients
- 2 ounces dry whole-wheat rotini pasta
- 1 teaspoon EVOO
- 1 tablespoon lemon juice
- 1 ounce soft goat cheese
- 1/4 cup chopped fresh herbs (basil, parsley, and chives, e.g.)
- 2 teaspoons pine nuts
- Salt and Pepper
- Optional - Sun Dried Tomatoes

1. Boil pasta per box directions, drain.

2. In medium bowl, drizzle pasta with EVOO; toss to coat. Chill pasta (overnight, if desired).

3. When cool, stir in lemon juice, crumbled goat cheese and fresh herbs. Add salt and pepper to taste. Top with pan-toasted pine nuts and sun-dried tomatoes.
