Cornbread Muffins
Nothing is better with fish than cornbread muffins.
ingredients
- 1 cup self rising flour
- 1/2 tsp salt
- 1/2 cup sugar
- 1 cup polenta or cornmeal
- 4 tsp baking powder
- 1 egg
- 1/4 cup oil
- 1 cup milk
directions

Preheat oven 180 C.
- 2
Mix dry ingredients well then add wet ingredients. Mix well. Spoon into a muffin tin that makes large muffins. Bake 20 minutes.

Serve warm with butter.
Cast Iron
You can also make one large cornbread in a cast iron skillet. Place oil into skillet and put in oven while it is preheating. Once you have the mixture made, pull out the skillet and put it on the burner. Heat until oil is very hot. Pour in mixture. Bake for 20-30 minutes
For Fun
Spoon cornbread mixture into a mini muffin tin and bake 15-20 minutes. This is great to take to parties because they make bite sized treats.
