Custard Rice Pudding
Good use for left-over rice
ingredients
- 2 eggs
- 1/2 c sugar
- 1/4 tsp salt
- 2 cups milk, scalded
- 1/2 tsp vanilla
- 2 cups cooked rice
- 1/2 c raisins
- 1/2 c chopped nuts
- nutmeg
directions
Heat oven to 350. Beat eggs, sugar and slat slightly to mix. Pour in scalded milk. Add vanilla, rice and raisins. Pour into 1 quart baking dish. Sprinkle with nutmeg and nuts. set in pan of 1 inch deep water. Bake 50-60 minutes.
