White wine Chicken and Mushrooms

ingredients

  • 1/2 c flour
  • salt, pepper
  • 1 lb chicken breasts
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 1/2 c minced shallots
  • 2 pkg mushrooms
  • 3 cloves garlic
  • 2 c white wine or champagne
  • 2 tsp fresh thyme
  • 1/2 c whipping cream

directions

  • 1

    Season flour and dredge chicken. Cook chicken in butter and olive oil. Remove chicken and add shallots, cooking until golden. Add mushrooms and garlic. Stir in wine and thyme and bring to boil. Add chicken and reduce heat to low cooking for 10 mins.

    Add cream and cook 5 mins until thickened.
