This yummy fresh salad uses an interesting combination of dried fruits, vegetables and meat. You can customize with differnt vinegars, seeds, nuts, etc. Add tortellini or other pasta if you like, too.

ingredients

  • 2 heads fresh broccoli
  • 1/2 red onion
  • 1/2 pound bacon
  • 3/4 cup raisins, dried cranberries and/or dried cherries
  • 3/4 cup sliced almonds or cashews
  • 1 cup light mayonnaise
  • 1/2 cup white sugar
  • 2 tablespoons white wine vinegar or apple cider vinegar
  • 1/2 cup toasted sunflower seeds or toasted pine nuts

directions

Cut the broccoli into bite-size pieces and cut the onion into thin bite-size slices. Combine with the bacon, dried fruit and your favorite nuts/seeds. Mix well. To prepare the dressing, mix the mayonnaise, sugar and vinegar together until smooth. Stir into the salad, let chill overnight and serve.

notes

For an absolutely awesome pasta salad, add (2) 9-oz. pkgs. of cheese-filled tortellini, cooked al dente, then well-drained and cooled. It makes a terrific picnic and potluck pasta salad and always gets rave reviews.
