Cheese Crackers
These are delicious and guaranteed to disappear quickly.

- 1 stick of butter – at room temperature
- 2 cups grated extra sharp cheddar cheese
- 1 1/4 cups flour
- 1/4 tsp salt
- 1/4 tsp cayenne pepper
- 1 to 2 Tbsp water

Preheat your oven to 350°

In a large bowl, cream the butter with an electric mixer until soft and smooth. Beat in the cheese until blended.

In a small bowl, mix together the flour, salt and pepper. Add to cheese mixture and beat just until combined.

Pour in 1 to 2 Tbsp water or just enough to help the dough stick together. Be careful not to overbeat.

Gather the dough into 2 balls. Knead 2 or 3 times and roll each ball into a cylinder 1 1/2 inch in diameter. Wrap in plastic wrap and chill for at least 30 minutes. The dough can also be frozen for up to 2 weeks.

Slice the logs into rounds a little less than 1/4 inch thick. Place the crackers onto a cookie sheet and bake until the crackers start to get just golden on the edges.
