Sesame pork with noodles
Linguini or other thin noodles work, but use Asian noodles if you can find them.
ingredients
- 1/2 lb ground pork
- 3 tbsp soy sauce
- 2 tbsp rice wine
- Ground pepper
- 1/4 c peanut butter
- 1 tbsp rice vinegar
- 1 c chicken broth (low sodium), heated
- 1 tbsp vegetable oil
- 6 garlic cloves, minced
- 1 tbsp ginger, fresh and grated
- 1 tbsp sesame oil
- 1 tsp red pepper flakes
- 1 lb linguini or fresh Asian noodles
- 3 scallions, sliced thin

Bring water to a boil for the noodles.

Season the pork with 1 tbsp soy sauce, pepper, and the rice wine. In another bowl, combine soy sauce, peanut butter, vinegar then season with pepper and whisk in the broth.

Cook the pork in a skillet until starting to brown then add garlic, ginger, and pepper flakes. Once cooked, stir in the broth/peanut butter mixture.

Simmer for 3-5 minutes until thickened, finish with the sesame oil and set aside. Serve over the noodles.
