New Year's Eve Good Luck Peas

Good Luck for a YEAR!

ingredients

  • 2 # dried black eyed peas, rinsed, sorted and soaked in large bowl for 6 hours or overnight.
  • 2 onions, chopped
  • 2-3 ham hocks and leftover ham (if you happen to have some)
  • 4 ribs celery and tops, chopped
  • 3 green onions and tops, chopped
  • 1/2 cup fresh parsley or 1/4 cup dried
  • 2 bay leaves
  • 2 cloves garlic, chopped
  • 1 can tomato sauce (8 oz.)
  • 1 tsp sugar
  • Tabasco to taste
  • Seasonings to taste

directions

Soak peas, rinse. Cover peas with 10 + cups water. Add ham hocks and ham and veggies. Add tomato sauce and sugar Cook on low for 2 1/2 to 3 hours. Season to taste. Serve over steamed rice. Good luck!
